Nanna's Homemade Chicken Soup
For added flavour
Season the chicken liberally with the gourmet salt and pepper. Add olive oil to your frying pan and bring it to medium to high heat. Brown the chicken thighs & drumsticks in batches, making sure not to crowd the pan.
This step adds additional flavour and colour to the chicken, but if you're working with a whole chicken skip to the next step.
Put the chicken, carrots, celery, onion, and chicken stock in a large soup pot and cover with cold water.
Add 1 tbsp Gourmet Salt, 1 tbsp Italian seasoning, 1 tsp seasoned salt, and 1 tsp black pepper.
Heat and simmer, uncovered, until the chicken meat falls off of the bones (skim off foam every so often).
Taste the broth (let it cool a bit first) for flavour. If it's not perfect, add additional seasoned salt and Italian seasoning to your liking.
If you're working with Kodu All Rounder, this will be your main source of homestyle flavour.
Bring the pot to a simmer for an additional 10 minutes to let the ingredients mix. Continue to season the broth to taste as needed.
Once the meat begins falling off the bones the soup is done. Use tongs and a fork to pull the meat off the bone as you serve.
