Season the chicken liberally with the gourmet salt and pepper. Add olive oil to your frying pan and bring it to medium to high heat. Brown the chicken thighs & drumsticks in batches, making sure not to crowd the pan.

Put the chicken, carrots, celery, onion, and chicken stock in a large soup pot and cover with cold water.
Add 1 tbsp Gourmet Salt, 1 tbsp Italian seasoning, 1 tsp seasoned salt, and 1 tsp black pepper.
Heat and simmer, uncovered, until the chicken meat falls off of the bones (skim off foam every so often).
Taste the broth (let it cool a bit first) for flavour. If it's not perfect, add additional seasoned salt and Italian seasoning to your liking.
