Mediterranean Roast Vegetables Recipe

The perfect Sunday cook up isn't complete without Mediterranean roast vegetables. This simple (yet delicious) recipe is an easy crowd-pleaser and takes little time to prepare. Healthy, tasty and great for entertaining small or large groups, pair with your usual roast of choice or add to your summer BBQ during the warmer months.

  • 1 x Medium Eggplant (skin on, diced into cubes), 
  • 2 x Zucchini (sliced into bite size pieces), 
  • 1 x Red Capsicum (sliced into strips), 
  • 1 x Large Sweet Potato (peeled, cut into cubes), 
  • 1/2 x Butternut Pumpkin (peeled, cut into cubes), 
  • 4 x Sebago Potatoes (peeled, cut into cubes), 
  • 2 x Red Onions (skin removed, sliced into wedges), 
  • 1 x Bulb Garlic (cloves removed and separated) , 
  • 3 x Tablespoons Extra Virgin Olive Oil , 
  • Salt & Pepper to taste

  1. Pre-heat oven to 180 degrees
  2. Place all chopped vegetables into a large mixing bowl
  3. Sprinkle Kodu Amalfi Seasoning (or a similar Mediterranean Spice Blend)
  4. Add extra virgin olive oil, salt and pepper
  5. Stir vegetables with a wooden spoon to ensure an even coating of oil and spice mix
  6. Place vegetables into a deep baking dish and cover with foil
  7. Place in oven for 30 minutes 
  8. Remove foil after 30 minutes and bake for another 10-15 minutes
